mindful recipe: stuffed acorn squash

SAUSAGE + APPLE STUFFED SQUASH

INGREDIENTS

  • 1 LB sausage, casing removed
  • 2 apples, cored and chopped
  • 1 onion, finely chopped
  • 1 celery stalk, finely chopped
  • 1 egg, beaten
  • 2 acorn squash, halved and seeded
  • 2 cloves garlic, minced
  • 1/2 TSP ground sage
  • 1/2 TSP ground cinnamon
  • 2 TBSP olive oil
  • Grassfed butter (I prefer Kerry Gold brand)
  • Sea salt + ground black pepper

INSTRUCTIONS

  • Preheat oven to 400 F
  • Brush inside of acorn squash with olive oil and salt + pepper
  • Place squash on a baking sheet and bake for 30 minutes until squash is tender
  • Melt butter in skillet on medium heat
  • Cook sausage until brown and set aside
  • Add onions, celery, garlic, and mushrooms to skillet and cook for 3-5 minutes
  • Add the apples and season with salt + pepper to taste
  • Sprinkle mixture with cinnamon + sage, cook for an additional 2-3 minutes
  • Combine meat + apple mixture + beaten egg, mix well
  • Divide stuffing evenly into squash halves
  • Place squash back in oven for an additional 15 minutes
